Abstract
El objetivo del trabajo fue establecer los parámetros de calidad e identificar los fitoconstituyentes del jengibre cultivado en Perú. El estudio farmacognóstico incluyó la identificación, clasificación taxonómica, pérdida de humedad mediante secado y parámetros de calidad como macromorfología, sustancias solubles en agua y etanol 70ºGL, cenizas totales, cenizas solubles en agua y cenizas insolubles en ácido clorhídrico. Los índices obtenidos fueron menores a los máximos establecidos, demostrando la calidad y pureza del jengibre. La especie fue identificada en el Herbarium Truxillensis de la Universidad Nacional de Trujillo. El estudio químico cualitativo se realizó mediante tamizaje fitoquímico, utilizando maceración con agitación constante y solventes de polaridad creciente. Se identificaron alcaloides, lactonas, aceites, glicósidos cardiotónicos, triterpenos, quinonas, resinas, taninos, flavonoides, azúcares reductores, antocianidinas, mucílagos y aminoácidos, pero no se evidenciaron saponinas, esteroides, cumarinas ni catequinas.
Abstract The study aimed to establish quality parameters and identify the phytochemical constituents of ginger cultivated in Peru. The pharmacognostic study included identification, taxonomic classification, moisture loss by drying, and quality parameters such as macromorphology, soluble substances in water and 70ºGL ethanol, total ash, water-soluble ash, and hydrochloric acid-insoluble ash. The indices obtained were below the established maximums, demonstrating the quality and purity of the ginger. The species was identified at the Herbarium Truxillensis of the National University of Trujillo. The qualitative chemical study was conducted through phytochemical screening, using maceration with constant agitation and solvents of increasing polarity. Alkaloids, lactones, oils, cardiotonic glycosides, triterpenes, quinones, resins, tannins, flavonoids, reducing sugars, anthocyanidins, mucilages, and amino acids were identified, but saponins, steroids, coumarins, and catechins were not detected.
